My tweaked lemon cranberry muffins
I took a regular recipe and tweaked it and i've used it time and time again ;) Now for this i do use some white flour although i also used whole wheat. It just works for this!
Lemon cranberry muffins
1c whole wheat flour
1c white flour
1c splenda the baking kind
3 tsp baking powder
1/2 tsp salt
2 egg whites
1c almond breeze(calls for milk but i like this)
1/2 apple sauce
1 tsp lemon extract
1c fresh or frozen cranberries
combine all dry ingredients.
in another bowl combine the wet ingredients.
Stir the wet into the dry until just moistened.
Fold in the cranberries.
i use a silicone muffin sheet but if you use the normal you either want to spray with non-stick spray or used muffins papers.
Bake at 400 for 20 mins or until a toothpick comes out clean.
