Since a couple of people asked....

Here's how I made brekkie today :)
Oh i read a long time ago on a low carb site about egg "muffins".  It's also a great way to get some veggies in :)

1/2c of egg substitute (you could probably also use egg whites)
2 lean turkey breakfast sausages cooked and cut up
broccoli (i didn't measure it but probably between 1/2-1 cup
15g of low fat shredded cheddar cheese

I have a great non stick muffin pan but if you don't you'd probably need to spray non stick on it. I turned the oven to 350 degrees and put the broccoli in 3 muffin cups, then i divided the egg between them and then topped with the sausage and the cheese.

I baked them until they puffed up and were starting to brown. Probably 15 minutes or so :) I just kept checking them until they were done.

Great way to start the day with some protein!! And i love that you can add other ingredients you like or take out the sausage and put some spices in!

These are great. A friend of mind makes something similar to these with a variety of fillings. She calls them "bites" but they are really crustless quiches.

I tried the egg muffins yesterday and they were delicious!! There are so many variations to try also. They will become a regular for me. Thanks for the recipe!!
