Lots of fun today....


Started today with some healthy grub :)

Then it was time to get ready to go where I volunteer because today we had bingo!!

Got off the bus early so I could get some walking in. Oh and stop and get a coffee from my favourite coffee shop.

Then it was time for some fun. I was a caller, and a general do whatever was needed person today. Some of the prizes were soooo cute!!

Since I knew there would be cupcakes and muffins there I decided to take along my own food. A meal replacement with protein, almonds and an orange kept me going I got home.

Today is my first day off of work and I usually like to make dinner when I'm not working. Tonight I decided to make chicken brushetta with carrots, green beans and  mango for dessert. Oh and a nice glass of wine and now I'm going to put my feet up and relax.

Today.......

Started out quite a bit earlier than usual. Thursday to Saturday I work afternoon shifts then Sunday I work a morning shift. Can anyone say tiring :) To get things started and so I stay away from donuts I had a nice breakfast before I left. Flat bun with pb2 mixed with cocoa banana and a side of grapefruit!!

Since roll up has started it's been crazy busy. I made sure to take some protein with me for a fast break. It really does help keep me full until I get home. (update: too many people booked to work today so I volunteered to go home early)

I also managed to get out on a walk today even though the weather was not the greatest. And of course I took Betty along :)

I finished my day with hamburgers :) Of course it was a lean one!

Nom, nom, nom......

Delish :) I just made pumpkin protein waffles and they turned out awesome!! This is the link to the recipe of course I didn't used banana or the cocoa or the cocao nibs, I did add 1/3c pumpkin and pumpkin spice. I waited until the very end to add almond breeze and then only needed a drizzle.

Awwwwww......

Pleased to meet you Dr.

Yes we finally found a Dr that was taking new patients. I had to get up early today to go and fill out a questionnaire and make an appointment!

So far I'm loving the camera but it will take a little getting used to :) And don't worry a picture will be coming of Betty.

In case you don't hear from me....

For one thing I'm back to work today and I work through till Sunday!

But there's even a better reason that I will be busy with.... My new camera :) We went and picked her up this morning. And she's purple!! I may just name her Betty.

The other reason I may not be around much is because I haven't even figured out my phone yet :) It's probably going to take a while.

Not a recipe but.......

I made this for the hubs tonight because he loves macaroni!
Annie's organic macaroni and cheese, broccoli, mushrooms,parmesan cheese, italian sausage:0) Ralph couldn't believe how much I piled on my plate.

Oh and I went on an awesome walk today and did some weights! So far this week 2 cardio walks and 2 weight workouts.

I found this recipe HERE and it rocks!! These are great with soup, with jam with just about anything :)
Thanks Julie Golean for a great recipe. By the way it only made 10 for me but I have a big muffin tin! And yes they are small but oh sooooo good.


pumpkin cornbread muffins 
  • 1/2 cup 100% white whole wheat flour (i used trader joe’s)
  • 1/3 cup cornmeal
  • 1/4 cup splenda baking blend
  • 1/2 tbsp baking powder
  • pinch of salt
  • 3/4 cup canned pumpkin
  • 1/3 cup liquid egg substitute
  • 1/3 cup quark (you could use greek yogurt etc)
preheat your oven to 375 degrees
1. in a bowl combine the dry ingredients (flour, cornmeal, sugar substitute, salt & baking powder) whisk them around until well combined.
2. in a seperate bowl combine the wet ingredients (pumpkin, egg substitute, & greek yogurt) and whisk together to make sure that all ingredients are combined thoroughly.
3. spray a 12 cup muffin pan with non stick spray and evenly distribute the muffin mixture into the pan.
4. allow to bake for about 20-23 minutes or 25ish if you like them a bit browned on top. remove from oven, turn off oven, and let cool.
5. pop out of tin and in to mouth!

Sometimes small things make my day!

As you know I needed to go to a meeting today. That involved taking a bus.

At the bus stop was a homeless man who asked me for a bus ticket, which I didn't have. He then asked me for money for the bus, but I didn't have any. He moved aside muttering how nobody helps anyone in this country.

Well along came a young girl who did have an extra ticket for him.

At this point the bus came and we got on the bus. He then started to talk to me. He asked me where I worked  and I told him Tim Horton's. He asked me how I liked it and I said it was good. Next he asked me if I was married which I answered yes. Then he asked if I had kids and I said I had two. He asked if they liked me to which I chuckled and said I think so :)

Anyway, as you can imagine he kept asking questions and I kept talking to him. Before I got off the bus he was telling me what a nice lady I was and I left the bus with a smile and I started my day on a very positive note :)

Oh did I say he looked like Santa Clause?? Made my day!!

An interesting day!


Last week was a new laptop, today is a new phone and Thursday will be a new camera :) Wow my hubby spoils me!!

Today started with some chocolate/banana protein pancakes with sf syrup! Was delicious I tell ya. I guess this could be one of my recipes for the challenge.

Chocolate banana protein pancakes (can use this in a waffle maker)
3 Tbsp whole wheat flour
2 Tbsp soy protein
1 tsp baking powder
1 Tbsp ground flax seed
1 tsp damara sugar (just helps to brown it for the waffles)
1 tsp cocoa unsweetened
1 tsp coconut oil (I find this helps the waffles to not stick plus i'm always low on fat)
5g cocao nibs
1/2 banana sliced(I actually used frozen banana slices)
2 egg whites
1/4-1/3c almond breeze

I like to blend all then put it into the pan and lay the banana slices on top. Serve with sugar free syrup!

Then I was off to a meeting to fix something that I did wrong last week. Yes I made a recording of events for the place I volunteer and later found out it wasn't in the system :( On the way i tried to take a picture of an officer on a horse, unfortunately the horse kept moving :)


After the meeting I was off to have coffee with Ralph and a couple of friends.

And then..... off to buy my phone. Now I don't use my phone much, just to call home or text my son or daughter, but Ralph would like me to have one so that when i'm on a walk if something happens I can call home.

Umm... update since when do phones come with no instructions!!!! I`m getting way to old for this.

A better update is that I managed to get a 20 minute weight workout in and a 60 minute walk.

Very interesting....


As you can see Snuffy's helping me with my new laptop!

I've been perusing Dr. Oz's site online and he has some pretty interesting stuff! Which can be a problem because then I get interested in it and forget there are other things I'm supposed to be doing :)

I'm working today and tomorrow and yes tomorrow is the first day of Roll up the rim!! I will be insanely busy.

A beautiful sunny day here (when I lift my head up from my laptop to look).

This week I'm starting a new routine for exercise. 3 days of walking, 3 days of weights and stretching. We'll see how that works for me. I've even made an exercise calendar so that I can keep track of which exercises I'm doing.

Wait till you see the recipe I'm trying this week :)

Calling all challengers!

This weeks challenge was to plan meals in advance and/or plan exercise!

So how did I do?? Well as far as meal planning it went great except for the day I forgot to take my lunch, however I waited until I got home and then you can believe I enjoyed it.

As far as exercise? I did exercise more than I have in a while so that was good. I do know, however, that I could have done more.

So how did the challenge go for you this week?? I'm looking forward to reading  your comments.

Still not 100%

But I'm feeling o.k to go to work today!!

Hopefully it won't get any worse this weekend.

Today was a strange day for eating. I stay well within my calories and I think I chose pretty healthy foods but it was one of those days where you just pick at small foods but quite often :) What I ended up doing was to make some protein waffles this morning which were really good and very filling!!

Then around 11 I started to feel hungry and yes I could quite easily have chosen high carbs but what I really wanted was protein. So what was going to be my lunch I divided into small snacks :)

So I started with almonds.

Next I had a very small pumpkin cornbread muffin.

After that I had some mango sprinkled with chili and lime

Next was a cheese stick

And last was some shrimp in a bit of chilli sauce.

And finally I was satisfied :) Now I can go to work and not have to worry about wanting to eat donuts!!

I have today off :)

Yes I have today off but only because I'm working straight through till Monday! Here in Canada Monday is Family Day and a stat holiday. Oh well, at least I'll get paid more.

What isn't fun is that Ralph has been sick all day and today I have a sore throat, runny nose and lets just say I've visited the bathroom more than I usually do :(

Hope I'm better tomorrow for work!

Lesson learned!

I'm usually really organized about going to meetings! I make sure i take water and i usually pick up a coffee :) Oh and what`s the other thing i usually do well i usually take my lunch.

I had my breakfast at 8 am and then just got home and ate my lunch at 3:30!! Lucky i didn't have a chance to go get something unhealthy. I do have to tell you that a home made chicken salad sandwich and an orange have never felt so good :)

Lesson learned!

Sorry question day was late today!

When i got up i didn't know why question day hadn't been published, turns out the new computers clock needed to be changed :)

I`m on a roll now!


We found out recently that Ralph is lactose intolerant! So we`ve bought the special milk and that`s great but he really was missing ice cream :)

So when i went to the grocery store today i looked for lactose free ice cream and found a cherry dark chocolate flake one! Ralph loves cherries so he was dead chuffed :)

And being the wonderful hubby he is he asked if i`d like some.....NO!!  I did it i turned down the equivalent of Ben and Jerry`s.

Another day of healthy choices under my belt. How has your day been?

Oh and the new laptop?? Sweet, the geek squad made it very easy for me.

Today....

I'm trying to have patience waiting for my laptop to be ready but oh my it's hard :) Update the geek squad phoned to say Lucy was ready to go home!

So to take my mind off of that i started my day with a suzi bagel breakfast and some grapefruit. I'm so glad i no longer take medication that cautioned me against grapefruits, i love them. Two things i didn't show was a coffee and hot sauce!

Then i decided that today i was going to get a great walk in! I didn't care what the weather was (colder than yesterday) i just did it :) I put my yak trax on and way i went! Very messy, it was either huge puddles or ice.

Got some extra walking in today :)

Started today bright and early with a protein blueberry pancake!

Then i had to get ready to go to two meetings. On the way there i did get off the bus early so that i could not only get some extra walking in but also buy a coffee from my favorite cafe :) chocolate raspberry!

Took a meal replacement and a couple of clementines for my lunch. Keeps me satisfied for a few hours.

Yesterday i spent some time planning my menus for this week and i also penciled in my exercise. I'm already ahead of the game this week!

Oh and by the way did i mention what the hubster bought for me? Well we did our taxes today and ended up getting more than we thought. Then Ralph turns around and says lets go to BestBuy.... A couple of hours later i'm the proud owner of a new laptop that is getting set up, virus protection and a back up disk from the geek squad :)  Hopefully i can pick it up tomorrow or Wednesday. My cheeks are aching from smiling so much.
