Oh my gosh!

I made something today that made me happy right down to my toes!

Pumpkin protein ice cream Smileand yes it is that good. But I made it even more fun when I used a technique I heard of from Karla. I didn’t have any plain greek yogurt in the fridge so I used a light vanilla one that counts as simply filling. And I just made enough for one! So instead of 1/4c greek yogurt and 1/2c skim milk I used 1/2c light yogurt and 1/4c skim milk. I also used 1% cottage cheese, 1/4 c canned pumkin, spices and sweetener. This is 100% simply filling!!! The fun part came after I’d whizzed it in my bullet I put it in a small ziplock back, then put the small ziplock bag inside a big ziplock back 1/2 filled with ice and 1/2c salt. That right! Then you simply move it around for 10 minutes. I had to put oven mitts on because my hands were freezing. Anyway at the end of 10 minutes you have pumpkin ice cream!!!!!

Nothing else much exciting today! I’m off to work this afternoon. But I am getting excited about the walking race on Sunday!

I do have to say that I'm finding this Simply Filling amazing. What I'm eating is a lot like I was eating already so that's not a big transition for me (especially since I can still have wine) but what I do find amazing is that as I'm eating I'm taking notice of whether or not I'm satisfied and need the rest of my plate. Sometimes I just don't really want any more. Yesterday I at a hearty breakfast because I knew I had a lot of running around to do and I wouldn't be home before 5. I did have a cappucino and veggies and fruit while out and they satisfied me until I got home for dinner. Oh and peaking on the scale confirmed that so far it's working quite well.

My Daily Nosh:

Breakfast: petite pumpkin scones, pumpkin butter, light vanilla yogurt, pineapple, 5% cream for my coffee 2pp for cream and pumpkin butter

Lunch: leftover lime chicken fajitas over sheritake noodles and pumpkin protein ice cream 0pp This was my first time trying the noodles. Not going to lie I really didn't like them :( and yes I rinsed them several times. I just ate the chicken.

Took to work: taco salad using meatless crumbles 2pp for the tortilla, 2 plums This dinner will seriously take away any craving to eat what I sell at work!

I feel the same about the noodles....
No amount of rinsing can get rid of that "noodle smell"

I hear you on the noodles. I was told to drain, rinse and then boil for a couple of minutes. Finally, dry them really well with paper towels and use. You really need a sauce to make them palatable. I decided they were too much trouble and that I liked spaghetti squash much better.

Oh, and check out this link about making zucchini noodles. I am going to get one of those hand tools to make the julienne noodles tomorrow. They look great!

Yummy! I love all the pumpkin stuff today! I'm going to have to give the pumpkin ice cream recipe a try.

I find with the shirataki noodles that you really have to incorporate them in your dish, otherwise the texture/taste is weird.
